Mrs. Well's Quiche

Quiche.

8 SERVINGS

Ingredients

3 cups flour (all purpose)

1/2 cup block margarine (not soft)

1 cup lard

2/3 cup cold water

1 teaspoon salt

vegetables such as: mushrooms, peppers, zucchini, spinach, broccoli, onion, etc.

cooked bacon

swiss cheese

6-8 eggs

1 Knorr vegetable soup (dry)

milk

Directions

1. DOUGH: Mix flour, margarine, lard and cold water. Roll. Press into quiche pan (bottom and sides).

2. FILLING: Wash and cut all vegetables into small pieces. Fry diced onions beforehand (optional). Cut swiss cheese into small ie. 5mm cubes. Mix all and spread over the dough.

3. Mix the eggs with dry vegetable soup and milk/cream. Pour this over the vegetables until they are just covered. Nothing should rise above crust edge.

4. Cook at 350F for about 1 hour.

Notes

Although not recommended, you can substitute some of the dough fats, ie I used butter instead of margarine. No amount of milk specified as it depends on the amount of the eggs. It's supposed to "lighten" the eggs, so use as much as desired but don't make the eggs runny. I use a mix of milk and cream.
